We are seeking a skilled and experienced Sous Chef to join our Catering team at Heritage Manor in Somerset West. The successful candidate will assist in leading kitchen operations, maintaining exceptional food quality standards, mentoring kitchen staff, and ensuring the smooth delivery of daily meal services across our retirement and healthcare environments.

Duties and Responsibilities
The successful candidate's responsibilities will include, but are not limited to:
- Assisting with the management, supervision, and development of the kitchen team
- Providing ongoing training and mentorship to kitchen staff
- Ensuring compliance with food safety standards, company policies, and procedures
- Maintaining consistently high standards of food quality, presentation, taste, and hygiene
- Preparing meals according to approved recipes and menu specifications
- Managing food production from preparation through to final presentation
- Producing daily meals for residents and healthcare patients, including rotating menu cycles and special dietary requirements
- Assisting with café food and baked goods production to ensure adequate stock levels
- Monitoring and recording food temperatures during preparation and service
- Collaborating with the team to manage stock control and minimise variances
- Maintaining a clean, organised, and compliant kitchen environment
- Completing and maintaining all required food safety documentation
- Supporting efficient kitchen operations while maintaining excellent service standards
Minimum Qualifications
- Professional Chef Qualification or Diploma from a recognised tertiary institution
Experience and Requirements
- Proven experience in a Senior Sous Chef or Head Chef role
- Strong knowledge of food quality management and kitchen standardisation
- Experience managing and motivating kitchen teams
- Sound understanding of health, safety, and food hygiene requirements
- Proficiency in a wide range of cooking and baking techniques
- Ability to work efficiently in a fast-paced environment
- Excellent physical stamina and ability to work extended shifts

Working Hours
You will work 16.25 shifts per month, from 07h00 to 19h00, Monday to Sunday, according to a roster. Flexibility is required to accommodate operational and standby requirements.
