KEY RESPONSIBILITIES
- Full kitchen management and leadership
- Menu implementation and daily service execution
- Managing food quality, consistency, and presentation
- Staff training and kitchen discipline
- Stock control, ordering, and food cost management
- Maintaining hygiene and HACCP standards
- Managing prep systems, SOP implementation, and service flow
- Working closely with ownership and management on operational growth
- Assisting with menu development and seasonal changes
- Leading both à la carte and event/service operations
IDEAL CANDIDATE
We are looking for someone who:
- Has strong leadership ability
- Is calm under pressure
- Has excellent organisational skills
- Has experience in high-end restaurants, lodges, or luxury hospitality
- Understands modern plating and premium service standards
- Has experience with open-fire cooking or charcoal grilling
- Is hands-on and willing to build and mentor a team
- Has strong administrative and stock control abilities
- Is passionate about hospitality and guest experience
Candidate Requirements
MINIMUM REQUIREMENTS
- 4–6+ years in senior kitchen management
- Previous Head Chef or Senior Sous Chef experience
- Valid driver’s license
- Strong knowledge of food costing and kitchen administration
- Good understanding of health & safety procedures
- South African citizen or valid work permit
