Be a key role player in influencing revenue, enhancing guest experience and elevating brand positioningYou will have the autonomy to curate exceptional wine programs, develop strategic supplier partnerships, and create signature by experiences!Key Responsibilities including but not limited to:Developing premium, diverse, and profitable beverage and wine menus for outlets, bars, and events.Curating beverage offerings aligned with restaurant concepts guest profiles, LQA standards and estate positioningPlanning and executing beverage-led events such as wine dinners, pop-up bars, Golf events, and supplier activationsImplementing initiatives that enhance guest experience, drive, upselling and uphold 5* / LQA standardsCollaborating with Marketing, Banqueting, Chefs, and F&B teams on promotions and experiential offeringsManaging relationships within estates distributors, and suppliers to ensure product availability and training supportNegotiating pricing rebates sponsorships, activations, and favourable supplier agreementsMonitoring beverage cost of sales margins, menu pricing and recipe costing to achieve profitability targetsImplementing effective stock control systems to minimise wastage, theft, overstocking, and variancesPreparing and managing budgets, forecasts supplier spend, price adjustments, and event beverage costingAnalysing POS, stock and sales data to identify trends optimise performance, and take corrective actionReporting on key metrics including beverage cost %, gross profit, margins, revenue performance, stock variances and event profitabilityTraining and developing staff in wine knowledge, beverage servic...

Qualifications:

• A minimum of Grade 12, Hospitality Management Diploma 
• and WSET (Wine & Spirit Education Trust) - level 2 higher certificate along with relevant beverage, wine, or bar service training
• Sound knowledge of liquor licensing requirements and responsible alcohol service practices
• 3-5 years' experience in beverage, wine, bar operations, stock control, cost management, banqueting or event execution within a 5* hotel and / or resort environment
• Proficient in MS Office Suite, hands-on experience using POS and stock control systems
• Valid drivers licence.
