Senior Sous Chef - Live InOur client based on Route 62, is on a recruitment drive for a Senior Sous Chef to join their team. The ideal candidate must be self-motivated, with the ability to motivate and inspire the brigade.Duties and Responsibilities include but are not limited to:Implementing and monitoring cost-effective kitchen operations aligned to annual plans and evolving guest trendsSupport day to day performance of the kitchenEnsure compliance with policies, recipes, standards and ways of working to achieve consistent results.Ensure that the brigade contribute to superior food quality and serviceSupport the Head Chef in training & development of kitchen employees (commis, CDP and Demis) are inspired to best practices in food production, hygiene and proper use of equipment to enhance efficiency, quality and presentation.Highly competent in producing a wide range of foods, including ethnic foods and special dietary requirementsLead, Manage, Guide and motivate kitchen brigadeExperience in overseeing and directing multiple small teamsCompetent in ensuring policies, processes and standards are implemented and applied across the kitchen functionAbility to monitor and ensure compliance with health, safety, security and other legal requirements across the kitchen operations

Qualifications:

• Matric or NQF4 combined with diploma in Culinary Arts
• Commercial cookery apprenticeship or equivalent
• 5 years experience in a culinary leadership role
• Demonstrate extensive experience in a luxury 5* Lodge / hotel or cruise liners
• Fluent in English and Afrikaans
• Fully computer literate - MS Office Suite
• Valid Driver's License (may need to drive company vehicles)
