Job OverviewThe Food & Beverage Manager is responsible for overseeing all food and beverage operations within the lodge, ensuring exceptional guest experiences, efficient service delivery, and strong financial performance. This role manages restaurant, bar, kitchen coordination, stock control, and service standards in line with hospitality excellence. Key ResponsibilitiesOperational ManagementOversee daily food and beverage operations (restaurant, bar, and dining experiences)Ensure seamless coordination between kitchen and front-of-house teamsMaintain high service standards and guest satisfaction at all timesManage dining schedules, special events, and guest requirementsGuest ExperienceInteract with guests to ensure exceptional service deliveryHandle guest feedback, complaints, and special requests professionallyEnsure personalized and memorable dining experiencesStaff ManagementRecruit, train, and supervise F&B staffManage staff rosters, attendance, and performanceConduct regular training on service standards, hygiene, and product knowledgeFoster a positive and professional team environmentStock Control & ProcurementOversee stock control, ordering, and inventory managementMinimize wastage and control costs effectivelyWork closely with suppliers and ensure quality of productsFinancial ManagementMonitor budgets, food costs, and beverage costsAnalyze sales and implement strategies to improve revenueEnsure all POS systems and cash handling procedures are followedHealth & Safety ComplianceEnsure compliance with food safety and hygiene standardsMaintain cleanliness and organization in all F&B areasEnsure adherence to health, safety, and licensing regulationsReporting & AdministrationPrepare daily, weekly, and monthly reportsMonitor KPIs and operational performanceEnsure accurate record-keeping and documentation
Minimum Requirements
- Grade 12 (Matric) or equivalent
- Diploma/Degree in Hospitality Management or related field (preferred)
- Minimum 3–5 years’ experience in a Food & Beverage management role
- Previous experience in a lodge, hotel, or luxury hospitality environment
- Strong leadership and team management skills
- Excellent guest service and interpersonal skills
- Solid understanding of food, wine, and beverage service
- Strong financial and cost-control knowledge
- Proficient in POS systems and Microsoft Office
- Ability to work under pressure in a fast-paced environment
- Strong organizational and problem-solving skills
- Passion for hospitality and guest service
- Hands-on and detail-oriented
- Professional, well-presented, and approachable
- Strong decision-making ability
- Flexible and adaptable
- Shift-based work including weekends and public holidays
- Live-in position may be required (for lodges)
- High-pressure environment during peak service periods
