Education
- Professional Cookery or Pastry Diploma (advantageous)
- Food Safety/HACCP certification
â Experience
- 3–5 years’ experience in a pastry kitchen
- At least 2 years in a 4- or 5-star hotel, lodge, or fine dining environment
- Experience in remote lodge environments (advantageous)
â Skills & Competencies
- Advanced pastry and plating skills
- Creativity and menu development ability
- Strong leadership and communication skills
- Excellent time management
- Ability to work long hours in a remote setting
- Strong understanding of stock control and food costing
Lodge-Specific Considerations
Working in a 5-star game lodge often includes:- Live-in position (shared or private accommodation)
- 6 weeks on / 2 weeks off or similar cycle (varies by lodge)
