Faircape Restaurant and Catering operates within Faircape Life’s luxury retirement villages, delivering high-quality, restaurant-standard meals across six prestigious locations in the Western Cape. We are seeking a detail-driven Assistant Kitchen Manager / Stock Controller to support the daily operational control of our kitchen at Noordhoek Manor, located just over Ou Kaapse Weg, minutes from Blue Route Mall.

This role is ideal for a hands-on hospitality professional who thrives on stock accuracy, compliance, and structure, and who enjoys working closely with Chefs to ensure smooth, well-controlled kitchen operations.

Key Responsibilities

Stock Control & Kitchen Operations

  • Support daily kitchen operations with a strong focus on stock control and accuracy
  • Conduct daily, weekly, and monthly stock counts (food, beverages, consumables, and equipment)
  • Capture, reconcile, and report stock movements and variances
  • Assist with procurement and ordering in line with company policies and budget controls
  • Monitor portion control and wastage, reporting trends and recommending improvements
  • Ensure correct food storage, temperature control, labelling, and stock rotation (FIFO)
  • Assist with oversight of kitchen equipment and report maintenance requirements

Hygiene, Health & Compliance

  • Support implementation and maintenance of HACCP and hygiene standards
  • Perform routine hygiene inspections and corrective follow-ups
  • Ensure compliance with Department of Health regulations and internal SOPs
  • Participate in Health & Safety meetings and inspections
  • Report and escalate incidents, hazards, or non-compliance immediately

Administration & Reporting

  • Maintain accurate kitchen records, reports, and checklists
  • Assist with asset tracking (equipment, crockery, utensils)
  • Support audits and resolve discrepancies timeously
  • Identify and suggest operational improvements to enhance efficiency and control

Minimum Requirements

Qualifications

  • Matric
  • Diploma or Certificate in Hospitality Management, Culinary Arts, or related field advantageous
  • Food Safety / Hygiene Certification 

Experience & Knowledge

  • Previous experience in a kitchen, catering, or food service environment
  • Proven exposure to stock control, ordering, and inventory management
  • Understanding of kitchen operations and food safety standards
  • Basic Health & Safety knowledge
  • Experience working with POS systems (advantageous)

Skills & Competencies

  • Strong administrative and reporting ability
  • Computer literate with working knowledge of Excel
  • High attention to detail and accuracy
  • Clear, professional communication skills
  • Customer-focused and respectful interpersonal style
  • Ability to work calmly under pressure and manage multiple priorities
  • Comfortable interacting with elderly residents and multidisciplinary teams

Working Hours

  • 45 hours per week
  • Monday to Friday: 07h30 – 17h00
  • Every alternate Saturday: 08h00 – 12h00
