The successfull incumbent will be responsible for the following:
- Maintenance and training of company recipe file and dish plating requirements
- Training and developing of kitchen staff up tpo the required standard
- Understand PILOT POS (beneficial) as well as entering of stocktake data on PILOT POS
- Understanding of yields on bulk prep as well as pack loss and yield %
- Conduct daily and weekly stocktakes as well as formulation of restaurant PAR levels (minimum stock levels)
- Placing of weekly orders
- Conduct supplier price comparison and sourcing of affordable suppliers
- Understanding of foodcost and elimination of wastage
- Conduct weekly staff shift rosters and maintenance of discipline
- Coordinate hotpass and ensure customer orders are correct
- Cooking of sauces and implement daily prep schedules
- Coordinate between different sections in the restaurant (Pizza / Grill / Cold section) and ensure order times are minimal
- Implementation of daily kitchen cleaning schedules
- Keep accurate record of daily prep and filling in of Prep Sheet on PILOT POS daily
Required Skills
- Chef: 1 to 2 years
- Kitchen Manager: 2 to 3 years
Candidate Requirements
- Must have strong leadership qualities
- Must be an excellent communicator
- Must be computer literate
- Knowledge of PILOT POS would be preferred
