Our company, a long standing, reputable organisation in the entertainment and betting sector, exciting opportunity available for a Food and Beverage Area Manager to be based in KZN. The incumbent will be responsible in ensuring growth of the branches in the allocated area and taking accountability of the management function in order to ensure smooth running and management of the operations within those branches. This includes improving the area’s financial performance in terms of sales, cost control, productivity and efficiency, resource planning, customer service levels, reporting and company policies, legislative and statutory policies. The incumbent will ensure that all branches comply with legislative requirements and standards of excellence.

Responsibilities:

 

  • Ensure branch sales targets are achieved/exceeded.
  • Competitor analysis and reporting thereon.
  • Menu revisions and creating innovative offerings to keep the brand ahead of competitors.
  • Customer feedback liaison through telephonic, online and email communication mediums.
  • Reporting from GAAP on GP% to National F&B Manager.
  • Ensure all F&B branches effectively operate on GAAP and input into system is correct. Ensure GRV process is conducted according to set requirements.
  • Collate stock reporting. Conduct bank recon against stock recon and sales recon. Investigate with F&B branch managers for reasons for variances, wastage, shortages.
  • Ensure operational excellence of all F&B branches.
  • Train and mentor F&B team on correct application of SOP’s.
  • Assist the National manager in investigating stock shortages and investigate with branches to determine reasons for variances, shortages, wastage etc.
  • Ensure efficient F&B cash management. Work closely with internal audits and investigate variances.
  • Extraction of sales information for regions from recons. Advice cash books of transfer required. Capture EFT’s.
  • Daily checking of F&B documentation submitted by the operation team at branches for both completeness and accuracy.
  • Preparation of the F&B trading results for inclusion in the monthly management accounts as well as the monthly GP excel spreadsheet. Submit to National F&B Manager beforehand for verification.
  • Checking and final preparation of the daily waitron sales data submitted by food and beverage management.
  • Checking entails balancing to daily sales ex recon, highlighting areas to F&B national Manager and follow up with F&B branch managers to investigate, resolve and, if necessary to correct.
  • Assist branch managers to implement F&B procedures. Implement F&B procedures in regions.
  • Manage flow of documentation between the branches and team support.
  • Work with team support creditors in resolving supplier problems/queries.
  • Resource management of F&B resources across regions (in conjunction with Branch managers) in line with operational trends and events to ensure optimal staff utilization. Schedule resources and assign duties taking into account busy periods, events, operating hours to ensure that the F&B department is sufficiently staffed and able to meet operational requirements.
  • Ensure timeous submission of daily, weekly, monthly F&B reports.
  • Work closely with Regional Betting Managers and Betting Branch Manager to enquire about customer experience to ensure that the F&B experience attracts and retains customers/punters.
  • On ongoing refresher training – identifying training gaps and addressing in real time.
  • Management of GAAP back office.
  • Work cohesively with Betting Area & Regional Manager to attain aligned business objectives.
  • Any other ad hoc duties that might be required.

Candidate Requirements

Minimum Requirements:

  • Relevant Food and Beverage/hospitality qualification.
  • Must have a minimum of 2 – 3 years’ experience as a manager within the Food and Beverage industry.
  • Extensive knowledge with the GAAP system.
  • Valid driver’s Licence.
