An upmarket and peaceful 4* Lodge and Conservation Centre, Located in the North West province. The Lodge has hosted international celebrities and actors/actresses and accommodates local and international universities and school groups – up to 50 guests at any one time.

Job Description


We are looking for a talented Sous Chef with experience in designing and preparing high-end good quality plates of food. A creative individual who is willing to participate in designing new dishes and creating seasonal menus and cooking of good quality meals using fresh ingredients. The successful candidate will be reporting directly to the Head Chef who is Prue Leith Trained and assist them in both culinary and administrative tasks. You will fill in for the Head Chef in planning and directing food preparation when necessary as well as controlling stock. The successful candidate must be an all-rounder who is strong in the Hot Kitchen, Cold Kitchen and ideally Desserts & Pastry as well. Produce high quality plates both in presentation and taste. Train new and existing kitchen staff on the preparation, arrangement and plating of dishes per the current menu. Ensure that the kitchen operates in a timely way that meets our quality standards.

Candidate Requirements


Diploma in Culinary Arts will prove advantageous. (Prue Leith or similar high end qualification will prove an advantage.)


An upmarket and peaceful 4* Lodge and Conservation Centre. Located in The successful candidate must have 5+ years of experience as a Sous Chef in a high-volume, full-service kitchen in a 4* environment. Thorough knowledge of various cooking methods, ingredients, equipment and procedures. Excellent record of kitchen and staff management. Accuracy and speed in handling emergency situations and providing solutions. Familiar with industry’s best practices. Must be able to work under pressure. Knowledge of best practices for training kitchen staff and implementing kitchen procedures. High level of creativity and reliability.  Familiarity with menu costing procedures. The North West province.
